A Special Horse Cake

I'd have to say that this cake is one of the most meaningful cakes I've ever made. I have waited over a year to get a request from Icing Smiles to make a cake for a child struggling with a medical illness. When I received the call to duty I could barely contain my excitement! Can you believe I had to wait 2 months to make & deliver this cake? I don't know how I managed to wait ha! There is a sweet little girl named Claire who is an amazing fighter. She has been through alot medically and I am happy to report that she is currently doing much better. We are praying that her health continues to improve daily! At the time I made this cake she had never rode a horse but shortly after she had her first horse ride! How cool is that?
